Why Whole Grains?

A whole grain is defined as an unprocessed kernel or the entire plant seed, but excludes seeds, nuts and legumes (these are classified differently). A whole grain consists of three layers: the germ, the endosperm, and the bran.  The nutrient rich core or germ contains antioxidants, Vitamin E, B vitamins, and healthy fats. The endosperm or middle layer provides the carbohydrate and proteins, while the bran or outer fiber-rich layer provides B vitamins and trace minerals.

I am a huge fan of eggs due to their protein quality. For avid exercisers and weight conscious individuals, the egg can provide valuable nutrition. As a source of protein, the egg white provides all essential amino acids, which are easily digestible. So what is the problem? The egg yolk provides a substantial amount of cholesterol. Who needs all that cholesterol? Just remember 1 egg yolk is equivalent to your recommended daily intake of cholesterol.

Remedying Stress and the Freshman Fifteen

Preparing for the transition between high school and college can seem stressful. There’s so much to do: campus visits and applications, purchasing all the items you need for the big move, researching your potential major at The College Board. The real challenges, however, begin their freshman year. Faced with tremendous lifestyle changes, new responsibilities, and a whole lot of schoolwork, many students do not develop healthy ways of handling their stress. These overwhelming feelings when starting college can often lead to increased weight. But with workout resolutions and solid nutrition habits, students can remedy their stresses. (more…)

Mercury in High Fructose Corn Syrup?

Due to high levels of mercury, the Food and Drug Administration (FDA) and Environmental Protection Agency (EPA) recommend that women who may become pregnant or are pregnant, as well as nursing mothers and young children, limit their consumption of Tile fish, Swordfish, Shark and Mackerel King.  Recent reports indicate that high fructose corn syrup (HFCS), a common ingredient in many foods and beverages, can also be contaminated with mercury.  However, there are no current dietary recommendations to limit the intake of HFCS.  (more…)
